Instructions to make Mint Chicken Korma:
  1. Wash the mint and coriander leaves thoroughly and chop them finely. Mix them with ginger, garlic yoghurt, turmeric powder, green chillis, coriander powder and lemon juice. Make well into a paste and marinate the chicken in this mixture for at least 1 hour (maximum 4 hours).
  2. Heat 3 tsp. oil in a pan and fry sliced onions until light brown and crisp. Take them out in another bowl (without the oil) and let it cool. Add yoghurt to the onions and keep aside.
  3. In the same pan, add the whole spices: cinnamon, cloves, bay leaf and cumin seeds. Mix well and let cook for about 2 minutes. Now add the marinated chicken and coat it well with the spices. Cook on high heat for about 2 minutes and then transfer it to another bowl and keep aside.
  4. Add the remaining oil in the same pan and add the dried spices: red chilli powder, cumin powder, mango powder and garam masala on a medium flame and add ginger and garlic. Cook for about a minute. Then add chopped tomatoes and sprinkle salt. Let it cook till the tomatoes turn tender.
  5. Add a little water to the pan and bring it to a boil over medium heat. (Skip this step if you don't want to have more curry: if you like more drier version).
  6. Now add the chicken to the pan and mix well. Let it cook for about a minute. Add the onions and yoghurt mix to the pan and mix everything well. Cover the pan and let it cook for about 15 minutes on medium flame.
  7. Remove cover and let it cook for another 5 minutes on low heat. Turn off heat and serve hot with plain/jeera rice or roti/paratha/naan.
