  1. Get 2 large sweet potatoes
  2. Prepare 500 g mixed colour tomatoes
  3. Prepare 4 spring onions
  4. Take 50 g rocket
  5. Make ready 40 g Feta Cheeses
  6. Make ready 1 tbsp extra virgin Olive Oil plus 1 teaspoon for drizzling
  7. Make ready Splash Red Wine Vinegar

Instructions to make Sweet Potato Salad:
  1. Preheat oven 180°C / 350°F or Gas mark 4.
  2. Scrub sweet potatoes clean, place in roasting tray and bake for 1 hour (or until soft) I turn half way through cooking.
  3. Roughly chop tomatoes, trim and finely slice spring onions toss with 1 Tbsp Olive Oil and splash of Red Wine Vinegar. Season to taste with salt and pepper.
  4. Once potatoes cooled a little peel skin off (can leave on if preferred) cut in bite size pieces and divide between plates.
  5. Toss rocket through the tomatoes and onion and pile on top of potatoes.
  6. Crumble over the feta, drizzle with 1 teaspoon of olive oil and pinch of black pepper and Enjoy.
