  1. Cut the eggplant lengthwise, make a diagonal cut in each skin, and do the same from opposite side. Then, cut them about 5 cm thick.
  2. Soak the eggplants from Step 1 in water for about 5 minutes to remove harshness. The eggplants tend to float, so put a plate on the top to fully soak the eggplant.
  3. Mix the ※ ingredients well. Drain the eggplants from Step 2 thoroughly.
  4. Heat a frying pan with oil, first cook the skin side of eggplants from Step 2 for about 3 minutes.
  5. Turn them around and add the ※ seasonings.
  6. Put the lid on and cook for about 10 minutes. Serve on a tray and sprinkle the finely chopped green onion.
