The ingredients needed to make Chicken Kabsa:
  1. Get 1 kg Chicken bone in cut
  2. Prepare 2 Onion medium sliced
  3. Take 1 tbsp salt
  4. Get 3-4 garlic mince
  5. Get 100 gm Tomato puree or paste
  6. Take 1 tbsp Ginger grated
  7. Prepare 5-6 tbsp Oil
  8. Get Basmati rice 2 cups soaked for 30 mins
  9. Prepare Saffron strands soaked in 1 tbsp of milk
  10. Get 4 cups Chicken stock
  11. Get 1/2 tsp nutmeg (Baharat or kabsa spices)
  12. Take 3-4 cardamoms
  13. Take 3 sticks cinnamon
  14. Take 1 dried lemon
  15. Prepare 1 tbsp paprika
  16. Get 1 tsp blackpepper powder
  17. Prepare 1 tbsp All spice powder
  18. Make ready 1/2 cup Almonds and raisins
  19. Get 1 cup grated carrots
Instructions to make Chicken Kabsa:
  1. Heat butter in a non stick pot. Add in the onions and the garlic. Saute them until just light pink.
  2. Add the chicken. Saute it well on medium flame turning it every now and then. After 10 mins, add the tomato puree and all the spices one by one.
  3. Add in the chicken stock and if you are short of it, then add 2 cubes of chicken seasoning (maggi) cubes to four cups of water.
  4. Cover and simmer until 20 mins on medium flame.
  5. Remove the chicken from the pot and add in the rice. Cover and cook until done. Do not stir it much. After it is done, give it a light stir.
  6. Preheat the oven to 200° and broil these chicken pieces for just about 10 mins. Do not over do it. If you wish you can even pan fry them in little butter.
  7. Garnish with grated carrots, raisins and nuts. Serve hot with a special sauce called shattah or even our very own raita.
