  1. Prepare 250 gm rice flour
  2. Get 150 gm sugar

Steps to make Khira Manda:
  1. For Stuffing: Heat the pan and add 1 tsp ghee. Add grated coconut, crushed cardamom and 100 g sugar. Mix them well. Keep stirring and cooking till the mixture becomes dry. Turn off the flame and leave it to cool.
  2. For Dough: Heat water in a deep pan on medium flame. Add salt to taste. Slowly add rice flour and stir it continuously until you get a thick dough. Keep the dough in room temperature and Knead it by adding 1 tsp oil to make it more soft.
  3. In another deep pan add milk and boil. Stir continuously and ensure that the milk is about 300 ml after being reduced. Then add remaining 50 g sugar and mix thoroughly.
  4. Make 8-10 balls out of the dough. Flatten each ball with the help of your palm and stuff with stuffing. Seal it to make a round ball in shape. Follow the process to make similar round balls with rest of the dough.
  5. Drop the round balls (mandas) in the reduced milk and cook for 8-10 minutes in low flame.
  6. Remove the pan from the flame. Add pepper powder and keep aside to cool down.
  7. Delicious KHIRA MANDA is ready to serve.
